Is there a possibility to always show ascending/descending results for particular sorting options?
With the help of the Improved Sorting extension, it's possible to configure sorting results for any option to be set in descending order.
To do this, kindly proceed to Stores → Configuration → Amasty Extensions → Improved Sorting → General tab. In the Sort Attributes Descending by Default setting, choose the options you wish to display with descending results by default. Conversely, leave options unselected to have them show ascending results.
